However, due to COVID-19, I am still waiting for the interview. Because of the limited number of people field offices are allowed to have at this time, the government is not moving immigration cases as quickly anymore.

What Can Someone Do If They Are In The US On A Visa And It Has Expired During The Shutdowns? Is This Considered an Illegal Overstay If They Could Not Get To An Immigration Office?

The USCIS stated they would be lenient on such cases, but we are not quite sure what this means. If you were in the US through a visa waiver program, they are allowing you to apply for an extension with CBP. It truly depends on what kind of classification you have, and what you attempted to do to extend your status before it expired.
